Vegan blueberry cake

This cake is light, fluffy and very more-ish.


  • 112g vegan margarine
  • 200g caster sugar
  • 200g self raising flour
  • 50g coconut flour
  • 50g desiccated coconut
  • 50g dried blueberries
  • 1tsp vanilla extract
  • 240ml plant milk


  1. Whisk margarine and sugar until light and fluffy
  2. Add all dry ingredients (except blueberries) and milk and mix until just combined
  3. Add in blueberries and mix gently
  4. Pour into a 20cm tin which has been lined with greaseproof paper
  5. Bake for 55 – 60 mins at 180
