Stuffed peppers

Had a bit of stuffed pepper love going on last night:
Wash, top and deseed peppers
Chop the following finely: 3 broccoli florets, 1 stalk celery, 1 med mushroom, 4 artichoke hearts
1 med grated carrot
20g Violife Blu Block chopped into tiny squares
Combine the above with: a few dashes of liquid amnios (or soya sauce) and hot sauce
Warm through in a fry pan (don’t add any oil)
Add some prepared couscous (I used half a cup) and Nooch (i used 1/4 cup)
Spoon into peppers and bake at 170 for 1 hour
Adjust ingredients to suit your preferences and how many peppers you want to fill
