Sticky Fruit and Nut Loaf

Of all the recipes I have created, I would say this is one of the simplest and healthiest. It’s a great one for beginners or the young bakers in your family. Enjoy!


  • 3 very ripe bananas (mash bananas until they are almost liquid)
  • 100g brown sugar
  • 50g vegan margarine
  • 210g self raising flour
  • 30g walnuts
  • 50g chopped dates / raisins / prunes (or a combo of all three)


  1. Cream together sugar and margarine
  2. Mix in rest of ingredients until just combined
  3. Pour into a greased bread tin (line the bottom and short sides of the tin and the loaf will just lift out after baking)
  4. Bake for 45 – 50 mins at 170 degrees
