Meetball sub
This is a huge fave in our house – meetball (meat free) sub topped with spicy marinara and vegan mayo.
Ingredients
- 3 carrots (washed and grated)
- 3 celery stalks (washed and diced)
- 12 mushrooms (washed, grated then diced)
- 2 garlic cloves (minced)
- 2tsp turmeric
- 2tsp smoked paprika
- 1 tsp nutmeg
- 1tsp allspice
- 1/2 tsp thyme
- 1 tin of pearl barley (drained)
- 60g oat flour (grind up porridge oats in a blender)
- 60g nooch (nutritional yeast)
- salt and pepper to taste
- Method
- Simmer veg with enough oil to cover pan until soft, then add spices and a splash or two of water to blend the spices and herbs into the veg.
- Add the oat flour and nooch at the same time and stir until the mixture comes together into a ball.
- Remove from heat.
- Once cool enough to handle, wet hands and roll 30g sizes portions into balls.
- Fry in the same pan you cooked the mixture in until browned on all sides.
- Serve in a baguette and top the meetballs with spicy marinara sauce (click here for my super simple recipe) and vegan mayo.
