Granola

It’s not just for breakfast – I had a bowl of this (still warm from the oven) for my lunch yesterday!
150g oats
150g mixed seeds
200g mixed nuts
100g unsweetened shredded coconut
100ml of apple sauce (grate an apple including skin into a pan and cook with a little water until soft)
50g brown sugar
30ml maple syrup

Mix all together in a bowl and then pour over 1/2 cup vegetable oil and mix again until well coated.

Then bake in a cookie sheet (one with edges) on top of greaseproof paper at 150 degrees for an hour or until golden brown -stir every ten mins so it doesn’t get too brown on top

Once cooled add chopped dried apricots, chopped dates, blueberries, cherries cranberries etc – a small handful of each.

Store in the cupboard a sealed container for up to two weeks.
