Chewy coconut raisin cookies

I’m not keen on raisins really, but my husband thinks they make most food taste better. My giant chewy cookies are one of his favourite sweet treats, and they are super easy to make.


  • 125g dairy free butter
  • 125g brown caster sugar
  • 150g self raising flour
  • 50g coconut
  • 50g raisins


  1. Mix everything together and add a tablespoon or two of plant milk to bring it all together into a  firm dough.
  2. Scoop onto a cookie sheet in equal portions.
  3. Or, if you’re fussy about these sorts of things, put the dough onto a sheet of cling film and then roll the dough into a fat log. Put in the freezer for 30 mins to firm up then slice into 2cm rounds and place on cookie sheet.
  4. Bake at 150 for 24 mins (if using room temp dough) or for 26 mins (if using chilled dough).
