Vegos (vegan bigos)

Ingredients

2 stalks celery, diced

3 large carrots, diced

3 med skin on potatoes, sliced into 3 cm pieces

½ cup raw, rinsed, quinoa

3 cups sauerkraut, rinsed and drained

1 can of beans (I use pinto)

1 tsp pepper

1tp marjoram

1 tbsp liquid smoke

Combine all above in your crockpot

Cover with veg stock, enough to come to top of veg

Cook on high for 5 hours

Season to taste and serve
