Tahmira soup and cheese sticks

Tahmira soup 2I’ve been so poorly for weeks now with this virus that has been going round –  I’ve even nicknamed it the plague! I made this spicy, smokey Tahmira soup and cheese sticks to dunk in the soup. I figure there’re probably loads more people out there with the plague who might enjoy this warming soup so here is the super simple, low FODMAP recipe:

Ingredients

  • 1 large butternut squash – peeled and chopped
  • 4 med carrots – peeled and chopped
  • 2 med potatoes peeled and chopped
  • 2 sticks celery – washed and chopped
  • 2 bell peppers (any colour) – washed and chopped
  • 1 tin chopped tomatos
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp chili flakes
  • 1/4 tsp tabasco sauce (optional)
  • 2 tbsp paprika
  • 1 tbsp dried marjoram
  • 1/2 tsp dried basil
  • 1/2 tsp dried dill-weed
  • 1/4 tsp oregano

Method

  • Put everything into a wide bottomed saucepan
  • Add water until it is approx. 2 cm above the vegetables
  • Stir once or twice
  • Cover
  • Cook on medium heat until vegetables are soft
  • Blend vegetables until the soup is smooth

Serve hot, topped with cooked chorizo slices and cheese sticks on the side for dipping
