I managed to find a little bit of time to play in the kitchen this weekend. Not as much as I would have liked mind! I created a recipe for these savoury little morsels that I have decided to call ‘snuggets’ (like snack nuggets, geddit?). Inexpensive, crunchy, low fat, low sodium, high protein, more-ish snuggets of flavour which are super simple to make:

  • 2 drained (but not rinsed) tins of whatever beans you have to hand (I used 1 tin of chickpea and 1 tin of mixed beans to make the batch in the photo)
  • 2 tbsp of smoked paprika
  • 2 tsp of cayenne
  • 2 tbsp of lemon juice
  • 1 large clove of garlic finely minced

  1. Mix all ingredients together and spread out evenly on a foil lined baking tray
  2. Sprinkle with a little salt
  3. Bake at 150 for 30 mins then at 100 for one hour or until the desired crunch is achieved (open your oven door at regular intervals to release the steam or your snuggets wont dry out properly
  4. Store in an air tight container (like your belly)
