Chocolate orange nests
To make the orange curd:
- · 86g butter substitute (I used Pure)
- · 144g brown caster sugar
- · 4 large beaten egg yolks (reserve the egg whites for the meringue nests)
- · 230ml fresh squeezed orange juice (about 3 large naval oranges)
- · 1tbsp orange zest
- · 3tbsp corn flour
In a saucepan whisk together the sugar and corn flour then add the butter and place pan over a medium heat.
Once the butter is melted, add the orange juice and stir constantly until the mixture begins to thicken.
Whisk a small amount of the hot mixture into the beaten egg yolk and then add this into the saucepan with the rest of the orange mixture.
Continue stirring the mixture until you can part the sauce on the back of the spoon.
Add the orange zest and remove from heat to cool.
While this is cooling, make your meringue nests.
To make the meringue nests:
Whisk the 4 egg whites until the mixture forms stiff peaks and then gradually add 60 grams of sugar while continuing to whisk until the mixture feels smooth when rubbed between finger and thumb.
Line trays with greaseproof paper and scoop heaped dessert spoonful’s of the meringue onto the trays. Shape into nests and bake at 150 (130 fan assisted) for 20 mins.
To assemble the dessert:
Once the meringue nests have cooled fill middle with orange curd and drizzle top with melted dark chocolate.
