Chewy coconut raisin cookies
- 125g dairy free butter
- 125g brown caster sugar
- 150g self raising flour
- 50g coconut
- 50g raisins
- Mix everything together and add a tablespoon or two of plant milk to bring it all together into a firm dough.
- Scoop onto a cookie sheet in equal portions.
- Or, if you’re fussy about these sorts of things, put the dough onto a sheet of cling film and then roll the dough into a fat log. Put in the freezer for 30 mins to firm up then slice into 2cm rounds and place on cookie sheet.
- Bake at 150 for 24 mins (if using room temp dough) or for 26 mins (if using chilled dough).
