Banana, date and walnut loaf

This loaf is sweet and delicious -perfect with an afternoon cup of tea or for a weekend breakfast treat. Best of all it uses up banana that have turned black and it’s very simple to make.

Ingredients

  • 100g coconut sugar
  • 2tsp dairy free margarine
  • 1tsp flax flour made up with 3tsp water (combine and let sit for 5 mins)
  • 3 overripe bananas (mashed)
  • 210g self raising flour
  • 20g broken walnuts
  • 20 dates roughly chopped into thirds

Method

  1. Combine first 4 ingredients and mix until free from lumps
  2. add flour, walnuts and dates stir until just blended in
  3. Pour into a greased tin and bake at 180 for 45 mins
